Our Story
More Than Coffee.
A Feeling.
Brew & Bloom was born from a simple belief — that a great cup of coffee can change the shape of your day.
How It Began
From a Small Kitchen to a Neighbourhood Institution
It started in 2019 with a secondhand espresso machine, a rented kitchen, and an obsession with getting the extraction just right. Our founder, Maya Chen, had spent years working in specialty coffee shops across Melbourne and Tokyo before returning home with one goal: to create a café that felt like a deep breath.
What began as a weekend pop-up at the local farmers' market quickly grew into something neither Maya nor her small team expected. Regulars became friends. Friends became family. And the little café on Bloom Street became a place people returned to — not just for the coffee, but for the feeling of being known.

What We Stand For
Our Values
Everything we do flows from a handful of principles we refuse to compromise on.
Craft Over Convenience
We never rush a cup. Every extraction is dialled in, every milk texture considered. We'd rather slow down than serve something we're not proud of.
Ethical Sourcing
We work directly with small-scale farms in Ethiopia, Colombia, and Guatemala — paying above fair-trade prices and visiting our partners in person every year.
Community First
This café exists because of this neighbourhood. We host local artists, support community events, and keep our doors open to everyone — always.
Sustainability
Compostable packaging, zero food waste partnerships, and a roastery powered by renewable energy. We're not perfect, but we're committed to doing better every year.
Where Our Coffee Comes From
Sourced With Intention
We travel to origin every year to meet the farmers who grow our beans. These are their stories.
Ethiopia
Yirgacheffe
Our Ethiopian single-origin is sourced from the Gedeo Zone, where coffee grows wild under a canopy of indigenous trees. The natural processing method produces a cup that's floral, bright, and unlike anything else we serve.
Colombia
Huila
The Huila region sits high in the Andes, where cool nights and rich volcanic soil create beans with remarkable sweetness and body. Our Colombian blend forms the backbone of our espresso.
Guatemala
Antigua
Grown in the shadow of three volcanoes, Antigua coffee has a distinctive smoky sweetness. We use it in our seasonal filter offerings and as a single-origin pour-over.
The People Behind the Cup
Meet Our Team
Twelve people who show up every day because they genuinely love what they do.
Maya Chen
Founder & Head Roaster
Maya spent six years working in specialty cafés across Melbourne and Tokyo before founding Brew & Bloom. She handles all green bean sourcing and roast profiling.
Luca Ferreira
Head Barista
Luca is a two-time regional barista champion who joined us in 2020. He trains every new team member and is the reason our espresso is always dialled in perfectly.
Priya Nair
Pastry Chef
Priya bakes everything from scratch each morning — croissants, banana bread, seasonal tarts. She trained in Paris and brings a quiet precision to everything she makes.
Come Experience It Yourself
